Cauliflower & Rosemary Soup

Ingredients

  • 1 tbsp butter
  • 1 chopped shallot
  • 2 sprigs fresh rosemary,diced
  • 1 tbsp flour
  • 1 cup milk
  • 1/2 cup whipping cream
  • 12 oz frozen cauliflower,thawed
  • 1/2 tsp salt
  • 1/4 tsp pepper

Preparation

Step 1

Melt butter,add shallot and rosemary.Saute 3-4 minutes.Add flout and stir.Cook 1 minute.Whisk in milk and cream.
Add cauliflower,salt and pepper.ook,stirring often until cauliflower is soft and mixture has thickened.
Puree until smooth.Adjust seasoning with salt and pepper,if needed.
