Ingredients
- 6 large potatoes, peeled and qtrd.
- 1 small onion, chopped
- 3 Tbsp. vegetable oil
- 3 Tbsp. cider vinegar
- 1/2 tsp. prepared mustard
- 2 Tbsp. minced parsley
- 1/2 tsp. sugar (optional)
Preparation
Step 1
Boil potatoes until fork tender (approx. 15-20 minutes) drain well and set aside.
In large bowl mix all other ingredients together.
Add potatoes and mix well.
Chill in refrigerator.
