Ingredients
- 1 lb. ziti (tubular pasta)
- 16 oz. ricotta cheese
- 1 cup fresh chopped parsley
- 2 eggs lightly beaten
- salt and pepper
- 2 cups grated mozzarella cheese
- parmesan cheese
- 3 cups homemade warm marinara sauce (see Sauces section) or commercial sauce

Method:
Cook the ziti al dente. Don’t let them get too soft.
Stir the beaten eggs into the ricotta cheese. Add the parsley, salt, and pepper.
Add the cooked ziti to the cheese mixture.
Grease or non-stick spray a 9x13-inch casserole.
Put a layer of marinara sauce in the casserole; next, a layer of the ziti; next a sprinkling of the mozzarella. Keep doing layers until you run out of ingredients. Top with sauce, mozzarella and parmesan cheese.
Bake, covered at 250˚F for 25 minutes. Uncover. Bake an additional 10 minutes to brown top.
Let sit for 10 minutes and serve.
