Cinnamon-spiced beef stew

Ingredients

  • 1 1/2 lbs ground beef
  • 1 1/2 cups water
  • 2 medium onions, quartered
  • 4 medium carrots, in inch pieces
  • 1 Tbl. sale
  • 1/2 tsp. ground ginger
  • 1/4 tsp pepper
  • 1 short cinnamon stick
  • 4 small zucchini chopped
  • 1 20 oz. can tomatoes
  • 1 16 or 20 oz can garbanzo beans drained
  • hot cooked rice

Preparation

Step 1

Brown beef, spoon of excess fat. Add water, heat to boiling, scraping up brown bits. Stir in onions, carrots, salt, ginger, pepper and cinnamon; heat to boiling.

Reduce heat to low, simmer 30 minutes. Stir in zucchini, tomatoes with their liquid and beans.

Cook 20 minutes, stirring occasionaly.

Serve with rice.
