Ingredients
- 1 & 1/2 tsp salt
- 1 & 1/2 tsp pepper
- 1 tsp ground allspice
- 1 tsp ground ginger
- 3 Tbs lime juice
- 1 & 1/2 lbs. pork tenderloin
- 2 C Long grain white rice
- 1 (19oz) can black beans, undrained
Preparation
Step 1
Combine first 4 ingredients.
Sprinkle lime juice over pork and rub evenly with spice mixture. Place on lightly greased baking sheet.
Bake at 450 for 25-30 mins or until a meat thermometer inserted into the thickest portion reads 160*. Cut into slices.
Prepare rice according to package and set aside.
Cook black beans in a saucepan until thoroughly heated.
Spoon beans over rice, serve.
