Ingredients
- 8 oz dried fettuccine
- 1/4 cup oil packed dried tomato strips or pieces
- 1 large zucchini or yellow summer squash
- 8 oz chicken breast meat, cut into cubes
- 1/2 cup finely shredded Parmesaon, Romano or Asiago cheese (2 oz)
Preparation
Step 1
1. Cook pasta in lightly salted boiling water according to package directions; drain. Return pasta to hot pan.
2. Meanwhile, drain dried tomatoes, reserving 2 TBS oil from jar; set aside
3. In a 12 inch skillet heat 1 TBS reserved oil over medium high heat. Add zucchini, cook and stir for 2-3 minutes or until crisp tender. Remove from skillet. Add remaining reserve oil to skillet. Add chicken, cook and stir for 2-3 or until no longer link. Gently toss zucchini, chicken, and tomato with pasta. Sprinkle with cheese and season with salt and pepper to taste.
