Passover Carrot Ring

Ingredients

  • 3 tablespoons potato starch
  • 1/2 cup sweet Jewish wine, such as Manischewitz
  • 1/4 cup (1/2 stick) soy margarine
  • 1/2 cup matzo meal
  • 1 pound carrots, peeled and grated
  • 1/4 cup raisins (optional)
  • 1/2 cup Sucanat
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • Juice and zest of 1 lemon (optional)
  • 1 cage free organic egg
  • 1/2 teaspoon salt

Preparation

Step 1

Preheat the oven to 350º. In a small bowl, dissolve the potato starch in the wine (it takes a bit of mixing). In a large bowl, cream together the margarine and matzo meal. Add the rest of the ingredients and mix well. Pour into a well-greased ring mold or casserole dish and bake for 1 hour, or until firm and golden on top.
