Ingredients
- 3 tablespoons potato starch
- 1/2 cup sweet Jewish wine, such as Manischewitz
- 1/4 cup (1/2 stick) soy margarine
- 1/2 cup matzo meal
- 1 pound carrots, peeled and grated
- 1/4 cup raisins (optional)
- 1/2 cup Sucanat
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- Juice and zest of 1 lemon (optional)
- 1 cage free organic egg
- 1/2 teaspoon salt
Preparation
Step 1
Preheat the oven to 350º. In a small bowl, dissolve the potato starch in the wine (it takes a bit of mixing). In a large bowl, cream together the margarine and matzo meal. Add the rest of the ingredients and mix well. Pour into a well-greased ring mold or casserole dish and bake for 1 hour, or until firm and golden on top.
