Chocolate Raspberry Mascarpone Torte

Ingredients

  • CRUST:
  • 1 1/2 cups chocolate cookie crumbs
  • 1/2 cup sugar
  • 1/4 cup melted butter
  • FILLING:
  • 1 tub (475 grams) Mascarpone cheese
  • 1/2 cup whipping cream
  • 1/4 cup granulated sugar
  • 1 Tbsp freshly grated orange rind
  • 1 tsp vanilla extract
  • 1 Tbsp orange liqueur
  • TOPPING:
  • 2 1/2 pints raspberries, washed and dried gently
  • with paper towel

Preparation

Step 1

Preheat oven to 375*. Grease baking pan.

Crust:

Mix chocolate cookie crumbs, sugar and melted butter well. Press into bottom of 9 inch fluted or round cake pan. Cook in 375* oven for 10 minutes.

Remove from oven and let cool completely.

Filling:

Combine Mascarpone cheese, whipping cream, sugar, orange rind, vanilla and orange liqueur into bowl or mixer and mix well until stiff peaks form.

Layer mix into tart crust and top with upside down raspberries.

Refrigerate until ready to serve.
