Halibut with Apple and Lemon Butter Sauce

Apple Halibut (this recipe is for 2 servings adjust according to how many guests)

Ingredients

  • 2 (6 to 7 ounce) fresh halibut fillets (of course adjust this to the amount of
  • guests)
  • Pinch of salt and pepper
  • 3 tablespoons of flour
  • 4 tablespoons of vegetable oil
  • 3 tablespoons butter
  • 3 to 4 baby red potatoes, quartered and roasted
  • 3 strips smoked, diced bacon
  • 1/2 cup sliced thinly red onions
  • 1 medium apple, sliced into match sticks
  • 1/2 cup Lemon Butter sauce (see recipe)
  • 2 tablespoons chopped chives (I use green onion)
  • Lemon Butter Sauce
  • Yield 1 cup
  • 6 ounces white wine
  • 2 tablespoons freshly squeezed lemon juice
  • 3 whole black peppercorns
  • 1 shallot, quartered
  • 1 cup heavy cream
  • 6 ounces cold, unsalted butter cut into pieces
  • 3 ounces cold, salted butter cut into pieces

Preparation

Step 1

Season halibut with salt and pepper. Lightly dust in flour. Heat the oil in a
big sauté pan, sear halibut over medium-high heat until golden brown (if you
sprinkle the halibut with granulated sugar it will brown faster) Remove from pan
(hold in warm oven). Sauté the bacon, red onion and apple in the same pan for
about 5minutes (I pre-cook the bacon quite a bit). Place the red potatoes in the
center of the plate, pour the bacon, apple, onion mixture over the potatoes.
Place the warm halibut on top,, pour the strained lemon butter sauce over the
fish, sprinkle with chives or green onion and serve immediately.

Lemon Butter Sauce


Combine wine, lemon juice, peppercorns, and shallot in a saucepan. Reduce heat
until the mixture is just approx. 2 tablespoons and has the consistency of syrup
(this takes about 15-20 minute. Add the cream and reduce again until mixture is
3-4 tablespoons and very syrupy (usually takes about 25-30 minutes).Remove pan
from heat and add butter piece by piece until each piece melt. Strain and serve…
