Scalloped Potatoes for the BBQ

If you have this in mind for a rainy day, you can also make these potatoes in the oven @ 350F for about 30 minutes (covered) till the last 5 minutes or so.

Ingredients

  • 8 red potatoes, thinly sliced
  • 2 large onion, chopped
  • 8 cloves garlic, chopped
  • 1/2 cup chopped fresh basil
  • 1/2 cup butter, cubed
  • salt & pepper to taste

Preparation

Step 1

Preheat grill for medium heat. Layer sliced potatoes on aluminum foil with the onion, garlic, basil & butter. Season with salt & pepper. Fold the foil around the potatoes to make a packet.
Place potato packet on heated grill over indirect heat, & cook for 30 minutes, or until potatoes are tender. Turn over packet halfway through cooking.
