Ingredients
- 2 C. sliced carrots
- 1 C. chopped celery
- 1 small onion chopped
- 1/2 C. green pepper, chopped
- 1/3 C butter
- 4 1/2 C. chicken or beef broth
- 4 medium tomatoes, peeled and chopped
- 4 t. sugar
- 1/2 t. salt
- 1/4 t. pepper
- 1/3 C. rice
Preparation
Step 1
In a large pot over high heat, sauté the carrots, celery, onion and green pepper in the butter until tender. Add the broth, tomatoes, sugar, salt, pepper and rice. Bring the mixture to a boil and then decrease the heat and simmer for 20 minutes.
