Ingredients
- 1 pkg. Simply Potatoes - regular shredded
- 1 pkg. Simply Potatoes - Southwest style shredded
- (or 2 pkgs regular)
- 1 large container mashed potatoes (e.g., Country Crock)
- 1/4 cup finely chopped chives
- 1 sprig of fresh rosemary, leaves finely chopped
- 1 minced onion
- 6 eggs
- 1 cup flour
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon baking powder
Preparation
Step 1
Mix all ingredients well. Heat butter and oil or bacon fat in a frying pan on medium heat. Use a 1/4 cup measure to make the pancakes - gently pat each pancake down, in the frying pan. Fry until golden on one side and then carefully flip. Fry until cooked through.
Pancakes can be served with apple sauce, sour cream, or plain.
