Chicken in Mushroom Caps

Ingredients

  • 2/3 cups chopped mushroom stems
  • 1 cup finely chopped onion
  • 3 tbsp butter
  • 3 cups cooked diced chicken
  • 1/2 cup white wine
  • 2 shakes Worcestershire sauce
  • salt and pepper
  • 1 few grains of nutmeg
  • 1 egg, beaten
  • 1 cup fresh bread crumbs
  • 16-20 large mushroom caps
  • Parmesan cheese

Preparation

Step 1

Cook cream sauce until bubbly. Saute mushrooms and onions in butter until just browned. Stir in chicken, cook five minutes. Add wine, Worcestershire sauce, salt, pepper and nutmeg, simmer five minutes. Reduce heat. Stir in egg and cream sauce, simmer 5 minutes. Add bread crumbs. Stuff mushroom caps. Sprinkle with cheese. Bake 25 minutes at 350.
