Ingredients
- 1.5 lb. lean ground beef
- 1/4 cup bread crumbs
- 1/4 t. salt
- 1/4 t. garlic powder
- 1/4 t. ground ginger
- 1 egg, slightly beaten
- 1/2 cup apricot preserves
- 1/4 cup hoisin sauce
- 1/4 cup rice vinegar
- 1/8 t. cayenne
- 1 medium red or green pepper, cut in 1 inch pieces
Preparation
Step 1
Preheat oven 375. Spray 15 x 10 inch pan.
Mix beef, bread crumbs, salt, ginger, garlic powder and egg until blended. Shape into 1 inch balls. Bake uncovered 20-25 min.
In 2 quart pot, mix preserves, hoisin sauce, vinegar and cayenne. Cook over medium low heat until hot. Add drained meatballs and bell pepper. Cook until bell pepper is crisp tender. Serve with toothpicks.
