Apple Scotch Cookies

These apple scotch cookies are like a cross between oatmeal and butterscotch pudding, all in a single cookie. Enjoy with a big glass of milk or scoop of vanilla ice cream.

Ingredients
- 2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon cinnamon
- 3/4 teaspoon salt
- 1 1/4 cup firmly packed brown sugar
- 3/4 cup butter, softened
- 1 teaspoon vanilla
- 1 (12-ounce) package butterscotch morsels
- 2 cups chopped apples
- 1 cup oats, uncooked
Preparation
Step 1
Preheat oven to 350°F.
In small bowl, combine flour, soda, cinnamon and salt.
In large bowl, combine brown sugar and butter; beat until fluffy. Beat in eggs and vanilla. Gradually beat in flour mixture. Stir in morsels, apples and oats.
Using a rounded tablespoon for each cookie, drop dough onto lightly greased cookie sheet. Bake at 350°F for 10 to 12 minutes.
