Turkey Mushroom Soup

Ingredients

  • 4 cups turkey or chicken stock
  • 2 cups fresh spinach, trimmed and coarsely shredded
  • 1 - 1 1/2 cups cubed chicken or turkey, cooked
  • 2 tbsp soy cause
  • 2 tbsp lemon juice
  • 2 green onions, diagonally sliced
  • 2 cups sliced mushrooms
  • 2 tbsp toasted sesame oil
  • pinch pepper

Preparation

Step 1

In a large saucepan, bring stock and mushrooms to boil. Reduce heat and simmer for 2 minutes. Add spinach, turkey and soy sauce, simmer for 2 minutes. Stir in oil, juice, onions and pepper.
