Ingredients
- 7 1/2 lbs. cucumbers, unpeeled & sliced
- 2 gal. water
- 2 c. lime juice
- 2 qt. vinegar
- 5 lb. sugar
- 1 t. salt
- 1 t. celery seed
- 1 t. whole cloves
- 1 t. mixed pickle spices
- 1 t. tumeric
Preparation
Step 1
Slice but don't peel the cucumbers
Soak them in 2 gallons of water with 2 cups of lime juice
Let stand 24 hrs
Rinse well
Soak in cold water for 3 hrs
Drain
Mix together the vinegar, sugar, salt, celery seed, whole cloves, mixed pickle spices, tumeric
Let stand in this mixture overnight
In the morning, boil for 35 minutes & seal.
Do NOT use aluminum utensils.
