Apple Jicama Cranberry Slw

Ingredients

  • DRESSING:
  • 1 1/2 tablespoon honey
  • 3 tablespoon lime juice (about 2 small limes)
  • 1 1/2 tablespoon extra-virgin olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • SLAW:
  • 3 cups julienned (long thin slices) jicama
  • 2 large Fuji apples, cored and cut into thin strips (about 2 cups)
  • 1 cup julienned carrot
  • 1/3 cup dried cranberries
  • 1/3 cup chopped fresh parsley or cilantro

Preparation

Step 1

To make the dressing, in a small microwavable bowl heat the honey for 5 seconds, just until runny. Remove from the microwave, add the lime juice, oil, salt, and pepper and which until mixed.

For the slaw, in a large bowl, combine the jicama, apples, carrots, cranberries, and parsley or cilantro. Pour the dressing on top, and toss together to coat.

Cover and place in the refrigerator.

Serve chilled.
