Ingredients
- 2 lbs unpeeled red potatoes, cut into 1/2 inch chunks
- 1 medium cucumber, sliced and quartered
- 1/2 cup red onion, sliced
- 1/2 cup pitted black olives, sliced
- 1 lemon - 2 tsp lemon zest and 1 tsp lemon juice
- 1/2 cup Italian salad dressing
- 1 cup feta cheese, crumbled
- salt and pepper to taste
- 8 pita bread rounds (optional)
Preparation
Step 1
Cook and cool potatoes. Prepare cucumber, onions and olives. Combine salad dressing, lemon juice and lemon zest. Toss potatoes and vegetables. Pour dressing over potato and vegetable mixture, toss to coat evenly. Crumble cheese over salad. Season with salt and pepper.
Serve immediately or refrigerate until ready to serve. Serve with pita bread wedges, if desired.
