Lemon Squares

Ingredients

  • Crust
  • 1 cup very soft butter (2 sticks)
  • 2/3 cup confectioner's sugar
  • 2-1/2 cups all purpose flour
  • 1 pinch of salt
  • Filling
  • 5 eggs
  • 2 cups granulated sugar
  • 1/2 cup all purpose flour
  • 1/2 cup fresh lemon juice
  • grated rind of 1 lemon (yellow part only)

Preparation

Step 1

1. Prepae the crust by mixing all ingredients for the crust in a small bowl. Kead the dough with your hands until well blended, soft and pliable. Press the dough into a 9"x12" cookie pan, building a higher rim around the edges. Crust will be 1/4 to 1/2" thick. Prebake the crust at 350 F for 10-15 minutes or until lightly browned. Let cool.
2. Mix the eggs and the sugar until light and lemon colored. Stir in the flour completely, then mix in the lemon juice and rind. Pour the lemon filling on to the cooled crust and bake 15-20 minutes at 350 degree F, or until filling is just set. Cool completely and sprinkle confectioner's sugar on top before cutting into squares.
