Rosemary Pork Loin

This is a simple recipe for delicious pork flavors.

Ingredients

  • Brine ingredients:
  • 2 cups water
  • 1 cup sugar
  • 1 cup salt
  • Ice cubes
  • Pork preparation:
  • 6-8 lb. pork loin
  • 1 cup olive oil
  • 5 cloves garlic
  • 1 tsp thyme
  • 1 tsp oregano
  • pepper to taste

Preparation

Step 1

Brine:
Bring water, sugar and salt to a boil, until all is dissintigrated. Let cool by either placing lots of ice cubes in water or by adding extra water and letting cool by itself.

After cooled, put meat in water and make sure it's submerged for one hour. Pat dry after taking out.

Combine olive oil, garlic, thyme, oregano and pepper in blender (food processor) and rub into pork.

Preheat oven to 500˚. Put pork in at 500˚ for 10 minutes each side. Set thermometer to 150˚.

For gravy:
Black currant jam (small jar)
Whisky 1/2 cup
Soy sauce if too sweet (tsp)
Pepper to taste

Heat over stove until light boil and thickened.
