Ingredients
- 4 cloves garlic minced
- 4 ears corn or 2 c frozen corn
- 1 Tbs olive oil
- 1 1/2 c chicken broth
- 1 c couscous
- 1/4 c diced green onions
- 1 large tomato diced
- 1 c green olives, chopped
Preparation
Step 1
Toss corn lernels with oil and brown in skillet or oven.
Mix garlic, corn, tomatoes and broth in medium large saucepan. Bring to boil.
Add couscous, remove from heat, cover for 5 minutes.
Stir in olives and green onion. Salt. Fluff and serve.
