Zucchini Cheddar Bread

Ingredients

  • 1 C onion, chopped
  • 1/4 C butter
  • 2 1/2 C Bisquick
  • 1 T parsley
  • 1/2 t dried basil
  • 1/2 t dried thyme
  • 1/4 C milk
  • 3 eggs
  • 1 1/2 C shredded zucchini
  • 1 C shredded Cheddar cheese
  • 3/4 C toasted chopped almonds

Preparation

Step 1

1. Preheat oven to 400 deg. Grease and flour one round pan.

2. Saute onion in butter untiol tender, cool slightly. Mix onion into baking mix, parsley, basil, thyme, milk and eggs. Beat vigorously for 1 minute.

3. Stir in remaining ingredients and spread in pan. Bake until toothpick comes out clean from the center, about 40 mins. Cool slightly before turning out of the pan.
