Tofu Lettuce Wrap

Ingredients

  • 1 to 2 tablespoons coconut oil(or any vegetable oil)*
  • 1/2 cup finely chopped yellow onion
  • 1/2 cup finely chopped Water Chestnuts
  • 1/2 cup finely chopped baby corn
  • 1/2 cup chopped carrot
  • 1 tbs White wine or Rice Wine.
  • 1 (8-ounce) package baked tofu, oriental or teriyaki style, cut into 1/2-inch cubes (plain Extra firm tofu also good. Need to sauteed first to get the grill mark).
  • 1 tablespoon finely chopped Cilantro
  • 1/2 cup chopped green onions
  • a few cloves of garlic
  • 1/4 cup soysauce, plus more for dipping*
  • 1 head butter or iceberg lettuce
  • Lime wedges

Preparation

Step 1

Heat oil in a large skillet over medium high heat. Add onions and carrots and cook until softened, about 5 minutes. deglaze with a table spoon of white wine or rise wine. Stir in garlic, tofu, water chestnuts, baby corn, green onions, and cilantro. Add 1/4 cup of the soy sauce, pinch of salt and pepper, and let simmer 5 to 7 minutes, stirring often. Remove from heat and serve tofu mixture with lettuce leaves for wrapping, lime wedges for squeezing and additional sauce for dipping, if you like.

For dipping sauce, i use minced garlic, ginger(1/2 teaspoon), cilantro, vinegar(or lemon), soy sauce, mustard, sesame oil, hot sauce(if desire)
