Cucumbers vinaigrette

Ingredients

  • 3 cukes, peeled, halved lengthwise, seeded and thinly sliced
  • 1/2 c vertically sliced red onion
  • 1 Tbs chopped fresh basil
  • 1 Tbs chopped fresh parsley
  • 2 Tbs red wine vinegar
  • 1 Tbs olive oil
  • 2 1/2 tsp Dijon mustard
  • 1/4 tsp salt

Preparation

Step 1

Place cukes and onion in a bowl. Combine basil and remaining ingredients, pour over cuke mixture. Toss gently. Cover and chill.
