Ingredients
- 3 cukes, peeled, halved lengthwise, seeded and thinly sliced
- 1/2 c vertically sliced red onion
- 1 Tbs chopped fresh basil
- 1 Tbs chopped fresh parsley
- 2 Tbs red wine vinegar
- 1 Tbs olive oil
- 2 1/2 tsp Dijon mustard
- 1/4 tsp salt
Preparation
Step 1
Place cukes and onion in a bowl. Combine basil and remaining ingredients, pour over cuke mixture. Toss gently. Cover and chill.
