Ingredients
- 1 cup butter, at room temperature
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 3 cups oats (old-fashioned or quick-cooking)
- 1 1/2 cups sweetened shredded coconut
Preparation
Step 1
Preheat oven to 375 degrees.
Cream butter and sugars until light and fluffy.
Add eggs one at a time and beat until well combined, scraping down bowl as needed.
Mix in flour, baking soda and salt. Add oats and coconut.
Drop by big tablespoonful on a lined cookie sheet.
Bake for about 15 minutes or until golden brown.
