Banana Nut Loaf

Ingredients

  • 2 C flour
  • 2 t baking powder
  • 3/4 t salt
  • 1/2 C shortening
  • 1/4 t baking soda
  • 1/2 C sugar
  • 2 eggs
  • 2 very ripe bananas
  • 2 t milk
  • 1/2 C pecans, chopped (optional)

Preparation

Step 1

1. Mix flour, baking powder, salt and baking soda and set aside.

2. Cream sugar and shortening until light and fluffy. Add eggs, beat well.

3. Mash bananas in small bowl, mix in milk. Alternately add flour mixture and banana mixture into creamed mixture.

4. Bake 350 deg 45-50 minutes. Check for doneness with toothpick.
