Spinach Cheese Puffs

Ingredients

  • 1 10oz package Frozen chopped spinanch, thawed
  • 1 cup milk
  • 1 stick butter
  • 1 tsp salt
  • 1 cup all purpose flour
  • 4 large eggs
  • 1 cup shredded swiss cheese or gruyere
  • 1/2 cup parmesan cheese

Preparation

Step 1

1. drain spinach, squeeze dry with paper towels
2. In a 3 quart saucepan over medium heat, heat milk and butterand salt until butter meltsand mixture boils, stirring ocassionally. remove sauce pan from heat, vigorously stir in flour all at once untilmixture forms a ball and leaves side of saucepan
3.Add eggs to flour mixture, one egg at a time,. beating well after each addition until mixture is smooth and satiny. Stir in cheeses. ( If not baking right away, cover surface with plastic wrap and refrigerate)
4. Preheat oven to 375.lightly grease two large cookie sheets or cover cookie sheets with parchment paper. Drop batter by level tablespoons onto cookie sheets 1 1/2 inch apart.
5. bake for 15-20 minutes or until cheese puffs are golden brown
6. Place puffs on Serving Platter and serve warm
