Ingredients
- 1 3/4 c gluten free flour
- 3/4 c firmly packed brown sugar
- 2 tbsp ground cinnamon
- 1/2 tsp ground cloves
- 2 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1/2 c chopped almonds
- 3 eggs
- 3/4 c applesauce
- 1 c buttermilk
- 2 tsp vanilla
- 2 c grated carrots
Preparation
Step 1
preheat oven to 375 degrees. line 12 c muffin tin with paper liners.
stir together flour, sugar, cinnamon, cloves, baking powder, baking soda and salt in a large bowl. stir in almonds.
whisk together eggs, applesauce, buttermilk and vanilla in medium bowl. stir in carrots.
stir carrot mixture into flour mixture just until moist. do not overmix.
spoon batter into muffin tin.
bake 18-20 minutes. remove from pan and cool on wire rack.
