Sweet Potatoe Biscuits

Virginia Twilley shared this recipe with my mother several years ago. I am not a fan of sweet potaote biscuits but I LOVE these.

Ingredients

  • 1 cup warm mashed sweet potatoes
  • 1/4 cup melted butter
  • 1/3 cup sugar
  • 2 cup baking mix

Preparation

Step 1

Combine all ingredients. Refrigerate at least one hour. Roll biscuits. Bake on greased cookie sheet at 425 degrees for 15 minutes.

Dough can be refrigerated and rolls baked fresh in small quantities. Rolled dough can also be frozen and baked after thawing.
