YAM CASSEROLE

Ingredients

  • Topping:
  • 5 lb. yams (enough to make 6 cups mashed)
  • 3 eggs, beaten
  • 1 tsp. vanilla
  • 2/3 C. sugar
  • 1/2 tsp. nutmeg
  • 2/3 C. butter, melted
  • 1/2 tsp. allspice
  • 1/3 C. heavy cream
  • 1 C. brown sugar
  • 1 C. peacns, finely chopped
  • 1/3 C. flour
  • 1/3 c. butter, melted

Preparation

Step 1

Bake yams in a 350F oven for 45 minutes or until done. Peel and mash making 6 cups. Combine with all other ingredient. Sprinkle topping on and cover with foil. Bake in 350F oven for 60-70 minutes.
