Pineapple coleslaw

Ingredients

  • Dressing:
  • 1 medium cabbage
  • 2 x 14oz cans pineapple tidbits
  • 1 Tbsp lemon juice
  • 3 red apples
  • 3/4 cup sliced almonds
  • 1/2 mayonnaise
  • 1/2 cup heavy cream, whipped
  • 1/2 cup lemonade concentrate

Preparation

Step 1

Finely slice cabbage. Dice apples & sprinkle with lemon juice to avoid discolouring. Add pineapple & almonds.



For dressing;

Combine mayonnaise & lemonade. Add to cream & mix thoroughly with salad ingred.
