Ingredients

  • 3/4 cup fresh lemon juice
  • 1 c finely chipped onions
  • dash red pepper flakes
  • 1 tbs cumin seeds
  • 4 tbs cooking oil
  • 1 tbs mustard seeds
  • 1/2 tsp turmeric
  • 1 tbs salt
  • 1 c roasted cashews
  • 1 c coriander leaves optional
  • 2 c basmati rice
  • 2 tbs ghee

Preparation

Step 1

1. squeeze fresh lemons and remove the seeds
2. Heat oil in pan and add cumin, mustard seeds and fry for 2 mins, add chopped onions, chilies and fry for 3 mins until onions turn golden brown.
3. add lemon juice to the pan
4. add salt and turmeric, stir intermittently
5. cook the rice in separate pot
6. to the lemon juice mixture add the cooked rice and the ghee and mix.
You can add what you want as an extra like lentils or spinach.
