Pineapple Chicken Over Rice

Ingredients

  • 8 oz can crushed pineapple, undrained
  • 2 T. Cider vinegar
  • 2 T. low sodium soy sauce
  • 1/2 tsp minced garlic
  • 1/2 tsp pepper
  • 1 1/2 # boneless breast, dicd
  • 3 c cooked whole grain rice

Preparation

Step 1

Combine all ingredients exept rice, in large ziploc bag. Marinate at leasat 30 min. in fridge. Place chicken and marinade in large sprayed dish, cover and bake 25-30 minutes @ 350. Serve over 1/2 c. rice
