FETTUCINE ALFREDO - Musial and Biggie's

Ingredients

  • 1 pound fettucine
  • 1 stick butter, cut into 1/3's
  • 1 shallot, minced
  • 1 clove garlic, mashed
  • 1 cup heavy cream
  • 1 1/2 cups Parm/Romano blend
  • salt and ground black pepper to taste
  • chopped parsley

Preparation

Step 1

Cook pasta according to package directions. Drain, reserve one cup of pasta cooking water. Return pasta to saucepan (where it was boiled) and place over medium heat. Add in butter and stir until melted, and then pour in cream. Toss in cheese and season to taste with salt and pepper. If sauce becomes too thick, thin with a little of the reserved pasta water. Garnish with chopped parsley.
