Orange Kiss-Me Cake

Ingredients

  • Cake:
  • 1 large orange
  • 1 C raisins
  • 1/3 C walnuts
  • 1/2 C shortening
  • 1 C sugar
  • 2 eggs
  • 2 C flour
  • 1 t baking soda
  • 1 t salt
  • 1 C milk
  • Topping:
  • 1/3 C sugar
  • 1/4 C walnuts
  • 1 t cinnamon

Preparation

Step 1

1. Cut orange in half, remove and discard all seeds. Squeeze 1/3 C juice from orange; set juice aside.

2. Position metal blade in food processor; add orange halves (peel and all), raisins and walnuts. Process until finely chopped, set aside.

3. Cream shortening, gradually add sugar, beating til light and fluffy. Add eggs one at a time, beat well.

4. Combine flour, baking soda, and salt, add to creamed mixture alternately with milk. Begin and end with flour mixture. Mix after each addition. Stir in orange-raisin mixture.

5. Pour batter in greased and floured 13 x 9 pan. Bake at 350 deg. for 40 to 50 mins. Let cool in pan 10 mins. Drizzle the reserved 1/3 C orange juice over cake.

6. Top cake with combined topping.
