Black Bean Soup

Ingredients

  • 3 cups low sodium vegetable stock
  • 1 1/2 cups canned, drained and rinsed black beans (1/2 beans reserved)
  • 1 1/2 cups canned, drained and rinsed white beans (1/2 beans reserved)
  • 3 garlic cloves, roasted
  • 1/4 cup fresh cilantro
  • 3 Tablespoons lime juice
  • 1 jalapeño pepper, seeded
  • 1 teaspoon ground cumin
  • 1/4 teaspoon Kosher salt
  • Fresh cilantro for garnish

Preparation

Step 1

Place vegetable stock, beans, garlic, lime juice, jalapeño pepper, and seasonings into pot.
Simmer until flavors are combined, about 30 minutes. Add reserved beans at end. Top with fresh cilantro to serve.
