Thyme & Spice-Rubbed Beef Tenderloin

Great for winter when too cold to grill. I made it with filets (cook only 15 min). Tenderloin can be too expensive!

Ingredients

  • 3 tsp Thyme divided (2/1)
  • S&P
  • 1/4 tsp Allspice
  • 1 3/4 lb Beef Tenderloin
  • 1/3 c Brandy
  • 1/4 c Shallots minced
  • 1 1/2 c Beef Broth

Preparation

Step 1

Combine 2 tsp thyme thru allspice in bowl, rub over meat, wrap in plastic wrap -refidg 24 hours
400*
skillet m-h coat with spray
Cook beef 5 min. brown all sides in skillet
Bake 26 min -remove sit 10 min.
Cook shallots 4 min in skillet -med heat
Add brandy, broth & 1 tsp thyme
Simmer 4 min.
Serve over meat
