Roasted Asparagus w/ Orange Vin.

This viniagrette is good with other veggies too, such as squash & zucchini.

Ingredients

  • 1/3 tb Orange rind & juice
  • 2 tb Shallots finely chopped
  • 1 tsp Sugar
  • S&P
  • 3 lbs Asparagus
  • 2 tb Olive oil

Preparation

Step 1

Combine Orange thru S&P -set aside
Coat single layer asparagus w/ spray
Drizzle w/ oil & S&P
Toss to coat
Bake 10 min.(stir at 5 min)
Toss with Orange Mix - bake 5 min.
