Potato Latke

Ingredients

  • 2 c. potatoes, peeled and grated
  • 2 eggs, beaten
  • 1/8 t. baking powder
  • 1-1/2 t. salt
  • 1 T. all-purpose flour or matzo meal
  • 1/8 t. pepper
  • oil for frying
  • Garnish: sour cream or applesauce
  • Mix all ingredients except oil and garnish together. Heat oil in a skillet over medium-high heat. Pour about one tablespoon of batter for each pancake into hot oil and fry until golden. Top with a dollop of sour cream or applesauce. Serves 4 to 6.
