Spinach Salad

Ingredients

  • Dressing:
  • 1 pkg. baby spinach – fresh - (if not already done, wash, dry, take off stems)
  • 1 can water chestnuts (drained and sliced)
  • 2 hard boiled eggs (chopped)
  • 3 slices crumbled, crisp bacon
  • 3/4 cup toasted pecans or pine nuts (put in 350 oven for about 10 minutes…until toasted)
  • 1/4 cup chopped sweet onion (i.e. Vidalia or Malaysian sweet)
  • 3/4 cup sugar
  • 1/2 cup Wesson oil
  • 1/3 cup catsup
  • 1/4 cup cider vinegar
  • 2 Tblsp. Worcestershire sauce

Preparation

Step 1

Combine salad ingredients then drizzle dressing over individual servings.

Refrigerate unused dressing.
