Ingredients
- 12 cups sourdough bread
- 8 oz. bacon cut crosswise into 1/2" pieces
- 1 butternut squash (about 2 lbs.), peeled, seeded, cut into 1/2" chunks
- 3 stalks celery, chopped
- 8 oz. shallots, finely chopped
- 2 Tbs. chopped fresh sage
- salt and pepper
- 3 cups chicken broth
Preparation
Step 1
preheat to 325
divide bread between 2 cookie sheets
toast bread 30-35 min., until golden
stir and rotate half way through
cool on wire racks
meanwhile in 12' skillet, cook bacon over med. 15-20 min.
transfer to very large bowl
remove all but 3 Tbs. bacon fat from skillet
add butternut squash, celery, and shallots, cook over med.-high for 15 min. or until tender, stirring frequently
remove from heat, stir in sage, slat, pepper
add bread and broth to bacon fat, toss well
add veggie mix and toss
stuff 12-16lb. turkey, or spoon into greased 13x9" baking dish
cover dish with foil and bake 20 min. remove foil and stir stuffing
bake 25 min. longer until slightly browned on top
