Zucchini with cherry tomates , garlic and basil

Ingredients

  • Yields 4 servings
  • 2 TBSP olive oil
  • 2 med zucchini, cut in half and then cut into moon slices
  • 2 garlic cloves crushed
  • 3/4 cup cherry tomatoes halved
  • 2 TBSP chopped fresh basil
  • 1/2 tsp salt
  • Fresh ground pepper

Preparation

Step 1

Heat a 10 inch skillet over med high heat; add olive oil, swirling to coat the pan. Add zucchini, cook, stirrin ofen until slightly browned (about 2 minutes)

Add garlic , cook stirring until just fragrant (about 30 sec). Add the tomoates, stir until softened (about 1 min). Stir in basil, salt and apper to taste
