Ingredients
- 2 3/4 cups flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 cup butter
- 2 cups sugar
- 2 eggs
- 2 tsp. grated lemon rind
- 3 tbsp. lemon juice
- 1 cup quick oats
Preparation
Step 1
Sift together flour, baking powder and salt. In large bowl, cream butter and sugar. Add eggs, beating well. Beat in lemon rind and juice. Gradually add flour mixture, then stir in oats. Chill dough thoroughly, at least 2 hours. Roll level tbsp. dough into balls and place on greased sheets. Dip greased bottom of glass in sugar and flatten each ball to 1/4" thickness. Bake at 375F until browned, 8-10 mins. Cool 1 min. then remove to rack to cool.
