Zucchini raisin bran muffins

Ingredients

  • 2/3 C flour
  • 2/3 C whole wheat flour
  • 2/3 C miller's bran
  • 2 tsp. baking powder
  • 3/4 tsp. salt
  • 1 tsp. cinnamon
  • 1/4 tsp. cloves
  • 1/2 C butter, softened
  • 2/3 C sugar
  • 2 large eggs
  • 1 tsp. vanilla
  • 1/4 C milk
  • 1/2 C chopped walnuts
  • 2 C coarsely grated zucchini

Preparation

Step 1

Preheat oven to 375 degrees.

Mix dry ingredients in a bowl.

With electric mixer, cream butter and sugar until light and fluffy. Add eggs, mixing after each. Beat in the vanilla.

Add flour mixture to butter mixture. Beat in milk. Add walnuts, raisins, and zucchini.

Bake in muffin tins 25 to 30 minutes. Turn out on rack to cool.
