Dark Chocolate Lemon Ganache Tartlets

Ingredients

  • pastry:
  • 2 cups flour
  • 2/3 cup powdered sugar
  • 1/4 tsp. salt
  • 3/4 cup unsalted butter
  • 1 large egg yolk
  • 1 Tbs. whipping cream
  • 1 tsp. vanilla
  • filling:
  • 1 cup whipping cream
  • 12 oz. bittersweet or semi sweet chocolate chopped
  • 1 Tbs. + 1/2 tsp. grated lemon peel
  • 6 peel twists

Preparation

Step 1

pastry:
combine flour, powdered sugar, and salt in processor
cut in butter
add egg yolk, cream and vanilla
blend well
gather into a ball and divide, flatten
wrap in plastic and refrigerate 1 hr.
preheat to 375
roll out pastry
cut out 4 1/2" rounds
place in tartlet pans
freeze 5 min.
bake for 20 min.

filling:
bring 3/4 cup cream to simmer
remove from heat
add chocolate and whisk smooth
add 1 Tbs. lemon peel
divide chocolate among crusts
refrigerate till set about 1 hr.

garnish:
combine 1/4 cup cream and 1/2 tsp. peel in bowl
beat to stiff peaks
add to chocolate tartlets
add lemon twist
