Chocolate Strawberry Pavlova

Ingredients

  • 4 egg whites, room temp
  • 1/4 tsp salt
  • 1/4 tsp cream of tartar
  • 1 cup of sugar (preferably fine granulated)
  • 4 teaspoons corn starch
  • 2 teaspoons white whine vinegar
  • 1 teaspoon vanilla extract
  • 2 Tablespoons of unsweetened cocoa powder
  • 2 ounces of bitter sweet chocolate shaved
  • 1 cup of whipped cream chilled
  • 2-3 cups of sliced strawberries (sprinkled with sugar)

Preparation

Step 1

Preheat oven to 275 degrees

Beat egg whites, salt and cream of tartar together in a bowl until whites hold a stiff peak. Add the sugar, gradually, beating until mixture is glossy.

Beat in the cornstarch, vanilla, cocoa and chocolate. Butter and lightly flour and 8 inch spring form cake pan.

Fill gently with meringue mixture spreading it higher on the sides to form a depression in the center. Bake for 1 1/4 hours until meringue is just slightly brown. Cool slightly and carefully move onto a serving plate.


Before you serve, whip the cream and spread on top of meringue within the edges then add strawberries.
