Ingredients
- 4 egg whites, room temp
- 1/4 tsp salt
- 1/4 tsp cream of tartar
- 1 cup of sugar (preferably fine granulated)
- 4 teaspoons corn starch
- 2 teaspoons white whine vinegar
- 1 teaspoon vanilla extract
- 2 Tablespoons of unsweetened cocoa powder
- 2 ounces of bitter sweet chocolate shaved
- 1 cup of whipped cream chilled
- 2-3 cups of sliced strawberries (sprinkled with sugar)
Preparation
Step 1
Preheat oven to 275 degrees
Beat egg whites, salt and cream of tartar together in a bowl until whites hold a stiff peak. Add the sugar, gradually, beating until mixture is glossy.
Beat in the cornstarch, vanilla, cocoa and chocolate. Butter and lightly flour and 8 inch spring form cake pan.
Fill gently with meringue mixture spreading it higher on the sides to form a depression in the center. Bake for 1 1/4 hours until meringue is just slightly brown. Cool slightly and carefully move onto a serving plate.
Before you serve, whip the cream and spread on top of meringue within the edges then add strawberries.
