Ingredients
- 1 cup lentils
- 1/4 cup rice
- 6 cups water
- 1/2 tsp. salt
- dash pepper
- 1/2 tsp. cumin
- 1 onion, finely chopped
- 1/4 cup olive oil
- 1/2 cup parsley
- a few cubes of toasted french bread
Preparation
Step 1
Place lentils and rice in water and bring to a boil over medium heat. Reduce heat and simmer 1 1/2 hours. Puree rice and lentils and add 1/2 cup water. Place over medium heat and add cumin, salt and pepper. Brown onion in oil. Add it to puree and cook 5 mins. Sprinkle the soup with parsley and bread cubes.
