Ingredients
- 1 tbsp. extra virgin olive oil
- 4 cloves garlic, minced
- 2 lg. onions, chopped
- 12 oz. mushrooms, chopped
- 2 lg. tomatoes, chopped
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 c. chopped fresh cilantro leaves or 1/4 c. dried oregano leaves
- 2 tbsp. dried marjoram or oregano leaves
- 1-2 tsp. ground red pepper
- 1 lb. Jarlsberg Lite, shredded
- 16 oz. black-eyed peans, rinsed & drained
- 2 (7oz) cans tuna, drained & flaked
- 6 oz. cooked pasta
Preparation
Step 1
Preheat oven to 350. Heat oil in large skillet; sauce garlic till golden. Add onions; saute till transparent, about 2 mins.
Add mushrooms, tomatoes, bell peppers; cook and stir 3-5 mins. or till mushrooms begin to brown. Add cilantro, marjoram, and ground red pepper.
Toss w/ cheese, peas, tuna, and pasta. Pour into greased baking dish. Bake, covered, 45 mins. or till cooked through.
Serve w/ crusty bread or coleslaw.
