Ingredients
- 1 TBS fresh ginger, peeled and minced.
- 2 tsp garlic, minced
- 2 TBS vegetable oil, divided
- 3 large eggs, lightly beaten
- 3/4 cup baked ham, diced
- 4 cups cold cooked rice
- 1 large head butter lettuce, chopped
- 1 TBS soy sauce
Preparation
Step 1
Combine ginger and garlic. Put 1 tsp of mixture in frying pan with 1 TBS oil and cook over medium high heat until sizzling, about 2 minutes.
Add eggs, then cook, stirring often, until set, 3 minutes; transfer from pan to bowl.
Put remaining ginger mixture inpan with ham and stir-fry until garlic is softened, about 2 minutes.
Add remaining 1 TBs oil and the rice; cook, stirring often, until hot, 3-4 minutes.
Stir in eggs.
Season with 1 TBS soy sauce and serve more at the table if desired.
Per 1 3/4 cup serving (with white rice): 14 gm protein, 12 gm fat; 45 gm carbohydrate.
